Cabbage and apple salad

This is cool, crunchy, and really tasty. For me, the bleu cheese crumbles really make it pop.

Ingredients:

  • 14-15 ounce bagged cabbage mix (like coleslaw mix; discard dressing or save it for another use)
  • ½ large red apple, variety of choice, cut into matchsticks
  • 1 scallion, chopped
  • 10 baby carrots, quartered lengthwise
  • 5 tablespoons salted and shelled pistachios
  • ¼ cup chopped parsley
  • Bleu cheese to taste
  • Dressing: 2 tablespoons apple cider vinegar, 1 clove pressed garlic, 1 teaspoon Dijon, 1 teaspoon salt, freshly ground black pepper, ¼ cup extra-virgin olive oil

Instructions:

To prepare the dressing, combine the vinegar through black pepper in a small bowl. Whisk in the olive oil.

In a medium bowl, combine all the salad ingredients except the bleu cheese.

Toss with the dressing. Sprinkle bleu cheese in to taste. Add extra black pepper to taste.

Serves 4-6.
