Lemon-avocado kale salad

This salad is fast, easy and really good. I make it all the time. I think we had it three days in a row last week.

Ingredients:

  • 10 handfuls or loosely packed cups chopped kale (or about 250 grams), big stems removed
  • 3 tablespoons fresh lemon juice
  • ¼ teaspoon salt
  • 2 small avocados

Instructions:

Place kale in a large bowl. Add lemon juice, salt and the avocados (peeled, with pits removed).

Use your hands to mash, mix and really massage everything together for about one minute, until the kale turns bright green, is significantly reduced and the leaves are well-coated.

Taste and adjust as needed. I usually add an extra sprinkle of salt. Top with freshly ground black pepper.

Serves 2-3.
