Arugula watermelon salad

Dressing ingredients:

2 tbsp. fresh lemon juice

2 tbsp. fresh orange juice

1 tbsp. apple cider vinegar

1 tbsp. fresh minced onion

1/2 tsp. coarse salt

1/4 tsp. ground black pepper

1/4 cup extra-virgin olive oil

Salad ingredients:

4 heaping cups arugula

8 thin slices from a quartered watermelon

1/2 avocado, sliced

6 asparagus spears (blanched as desired)

4-6 slices of smoked salmon

2 tbsp. crumbled goat cheese or feta

Instructions:

To make the dressing, combine the lemon juice through black pepper in a small bowl. Whisk in the oil. (Cover and refrigerate unused dressing for up to one week).

Toss the arugula with 6-8 tbsp. of dressing.

To make the salad, use two separate dishes. Lay four slices of watermelon on each dish. Distribute half of the following on top: dressed arugula, avocado, asparagus (wrapped with salmon) and cheese. Top with freshly ground black pepper.

Makes 2 servings.
