Hello from quarantine!
I’m afraid that my 3-year-old recently tested positive for COVID-19, so my family is on lockdown as we try to get her better and keep my 2-year-old COVID-free.
It’s been a bit of a wild week, first sequestering ourselves away after a potential exposure, then dealing with the sickness we’ve spent a year-and-a-half eagerly trying to avoid. But here we are. So far, she’s OK. One day at a time…
Needless to say, I don’t have anything profound on my mind this week. But I do have one thing to share:
Soup.
I made a big pot of this recipe early in the week and we nibbled at it for days. It’s my version of a dish I learned from my Filipino mother-in-law. It’s easy to make and full of healthy stuff that can, theoretically, help strengthen our systems. It’s also yummy and nothing beats a brothy soup when you have a cold (which not so conveniently, I do).
