Ingredients:
2 cups pumpkin puree (see puree instructions in pie recipe)
2 1/2 cups almond milk
1 teaspoon vanilla extract
6 tablespoons maple syrup
1/4 teaspoon pumpkin pie spice
1 teaspoon agar (also called agar agar-a vegetarian gelatin substitute; sold in health food stores)
Instructions:
Add the pumpkin, almond milk and vanilla to a blender. Pulse until smooth.
Transfer mixture to a pot and add the syrup, pumpkin pie spice, and agar. Stir with a wire whisk to combine.
Bring to a boil, stirring constantly. Allow the mixture to cook for one minute at a light boil, then remove from heat, divide the pudding into 6-8 servings, and refrigerate for at least 2 hours or overnight to set.
Serve with shaved dark chocolate and whipped cream as desired.
