Ingredients:
1 tbsp. balsamic vinegar
1 tsp. salt
2 tbsp. extra-virgin olive oil
2 cloves garlic, pressed
10 fresh basil leaves, chopped (with extra for garnish)
6 on-the-vine tomatoes, chopped
Optional: fresh mozzarella
Instructions:
Combine the vinegar and salt in a small bowl. Slowly whisk in the oil. The mixture should be syrupy.
Stir pressed garlic and basil into the tomatoes. Mix in the dressing.
Add fresh mozzarella as desired.
