Ingredients:

1 bunch asparagus

1 tbsp. minced shallot

2 tbsp. extra-virgin olive oil

1 tbsp. fresh lemon juice

Salt to taste

Shaved Parmesan cheese

Freshly ground black pepper

 

Instructions:

Use a vegetable peeler to shave the asparagus (hold onto the bottom of the stem to peel). Place shaved asparagus in a bowl, add the shallot through salt and toss by hand. Top each serving with shaved Parmesan and freshly ground black pepper.

Makes 2-4 servings
