Self-care involves eating a healthy diet and enjoying occasional indulgences.
As chef and food blogger Maribeth Mulready puts it, “and by occasional, I mean daily.”
I agree. Thus, I asked her to share a few of her favorite quick-and-easy recipes.
I’ve written before about how cooking is inherently generous and loving. The food we make is a gift to ourselves and others. But even though I hosted a TV cooking segment for years and wrote a cookbook, I have zero inspiration in the kitchen these days.
Enter, Maribeth.
She’s the creator of ChefMaribeth.com and graduate of the National Gourmet Institute’s chef training program in New York. She started blogging to share food inspiration with northeastern friends and family after moving to Iowa. Her playfulness and personality are just as appealing as her plant-based food.
I invite you to try out Maribeth’s warm, delicious, and beautifully simple winter soups with me. And, in the spirit of big-picture self-care, sample the dessert she shared, too. I’ve actually made the cookies three nights in a row and eaten most of the batch myself. (Sheepish face.)
Give these dishes a try, check out previously featured recipes, and please send me your favorite quick and easy meals. I may feature them in a future column.
Bon appetite!
