Ingredients
2 cups carrots, sliced diagonally
3 cups broccoli, cut into small florets
1 (14 oz.) can coconut milk
1 (14 oz.) can diced tomatoes
3 cups vegetable stock
2 tbsp. curry powder
Dash of cayenne
1/2 tsp. salt
6 ounces soba or ramen noodles
1 tsp. lemon juice
Instructions:
Steam the carrots and broccoli. In a medium saucepan on low heat, combine the coconut milk and tomatoes (with their juice). Add the vegetable stock and bring to a simmer, but do not boil. Add the curry powder, cayenne and salt. Continue to cook on low heat for15 minutes.
Boil a small pot of water and cook the noodles according to the package, minus two minutes and drain. Add the vegetables and lemon to the broth. Simmer 5 minutes. Add the noodles immediately before serving.
Serves 4.
