2 tablespoons olive oil

1 can jackfruit (in brine)

1 packet taco seasoning

Hard or soft taco shells/tortillas

Toppings as desired: avocado, black beans, corn, tomatoes, salsa, etc.

Instructions: In a large non-stick skillet, heat pan with oil. Drain, rinse, and pat dry jackfruit. Chop into small chunks then place in heated skillet. Stir until heated through. Add seasoning. Stir for another minute.

Optional: Wrap tortillas in damp cloth, heat in microwave for 15 seconds or so. Assemble with all the toppings.
