I’m on a perpetual hunt for quick and easy recipes.

With a 4-month old and 22-month old, I don’t have the time or desire to prepare complicated meals (i.e. anything that takes longer than 30 minutes—and even that’s pushing it), but I also don’t want to get takeout or make a box of macaroni and cheese every night.

We all know homemade meals are typically healthier and cheaper. I also find them to be a beautiful way to end the day. Even whipping up something simple warms the house. Cooking inspires cooperation and presence.

So, I’d like to make sharing quick/easy/healthy-ish recipes a somewhat regular topic in this column.

This week, the recipes are from my friend and fellow yoga teacher, Stacie Zollars, who runs the mouth-watering food blog, Sugarfacebakes.com. I discovered that she’s a talented and inventive cook when I started seeing Instagram posts that made me drool.

Stacie shared three recipes as her favorite quick and easy go-tos. Jackfruit is a healthy vegan meat replacement, and it makes for great tacos. I’m particularly smitten over her Sundried Tomato Pasta.
